Olive varieties: 60 % Frantoio, 20 % Moraiolo, 15 % Leccino, 5 % Pendolino.

Characteristics: The olives are picked exclusively by hand before December 10th and kept in wooden crates for a maximum of 24 hours after picking and before cold pressing.

Clear bright green colour. Strong and fruity scent, rich in herbal notes and a pronounced fragrance of unripe almonds. The flavour is delicate yet complex, harmonious with bitter-spicy shades.
