Cloudberry Compote - 250 ml (Gourmet Sauvage, Quebec, Canada)

Cloudberry compote  *.

Cloudberry
In the Montagnais language the word for cloudberry, “chicouté”, means fire. The cloudberry grows in peat bogs swept by sea breezes and in the vast, poorly drained plains of the Far North. It measures about 12 centimetres in height and bears a single orange berry the size of a raspberry. It is difficult to harvest. Despite the difficulty of supply and its high cost, the cloudberry is growing in popularity because of its exquisite taste, somewhat like apricot with a whiff of tropical fruit.
Cloudberries have long been a favourite fruit in northern regions where they are used in desserts, liqueurs and alcoholic drinks. The fruit has large, hard seeds, which some find unpleasant, preferring to pass their cloudberries through a sieve. Used in a cheesecake, cloudberry jam is superb! And cloudberry compote is the perfect accompaniment for pork, not to mention duck.

* Comments: Like jam and marmalade, compote is a cooked dish of fresh or dried fruits, simmered whole or in pieces in sugar syrup. However, the sugar content is generally much lower in compotes than in jams.
