Les Établissements Fallot produces mustard according to traditional secret recipes, grinding the seeds with millstones in order to preserve optimum flavour.
 
Fallot is an independently owned family firm established in Bourgogne in 1840, the only firm still located on its original premises close to the Hospices de Beaune.
 
The term "mustard" encompasses several products that vary considerably in their composition and manufacture. Fallot uses three major designations.
 
La moutarde de Dijon -- White, strong or extra strong, the mustard paste consists of one-third black seeds (brassica nigra) or brown seeds (brassica juncea) added to the verjuice.
 
La moutarde à l'ancienne -- Mustard seeds are mixed directly into the mixture of verjuice, spices and herbs. The mixture is roughly ground without being sifted in order to preserve the whole seeds.
 
Les moutardes aromatisées -- The tangy taste of the seeds must not mask the aromatic notes of the other ingredients. The mixture offers an extensive palette of flavours and aromas.
