Binomial name: Piper nigrum.
 
Origin: Malaysia.
 
Comments: Its colour is remarkable – uniformly beige. White pepper consists of the pepper plant seed only, with the fruit removed. This is usually accomplished by allowing fully ripe berries to soak in water for about a week, during which the flesh of the fruit softens and decomposes.
 
Use: This very rare, top quality pepper enhances seafoods, white meats, fish, vegetables and mushrooms. Also excellent with certain fruits such as oranges and pears.
