Comments: The pepper is tied to strings as soon as it is harvested and then hung on the outer walls of houses for approximately two months for the initial drying before being heated in an oven for full dehydration.

It is ground while still warm to obtain a fine grind. Often used by chefs in original sweet-and-sour meals. Delicious with an old cheese.
