Cream of Carrot and Mango, with a Hint of Troika Tea

Ingredients (for 4 servings)

potatoes

butter

honey

water

Troika tea

ml

cream cheese

milk

salt and pepper to taste

 

 

 

Preparation

 

Beforehand

1.

Cut the carrots, mango and potatoes into thin slices.

2.

Sweat the carrots in butter. Add the honey and let them caramelize.

3.

Moisten with 800 ml of water and bring it to a boil. Add the potatoes and mango. Cover and let simmer at low heat for 30 minutes.

Let the Troika tea steep in 200 ml of boiling water for 7 minutes.

 

At prep time

5.

Add the brewed tea, the cheese and the milk. Cook for another 5 minutes without bringing it to a boil.

6.

Blend the soup in the food processor and season to taste.

7.

Just before serving, place a small amount of black tea oil on the soup.
