Truffle Egg Mimosa


Do not blend the egg yolks, as they will become mushy and clustered.

Ingredients (for 4 servings)

ml

black truffle mayonnaise

Preparation

 

1.

Cook the eggs in boiling water (10 minutes or more depending on their size).

2.

Cool the hard-boiled eggs under tap water. Scale them with care. Carefully cut the eggs in half.

3.

Remove the yolk. Take half the yolk and mix with the black truffle mayonnaise.

Garnish the egg centres with this preparation.

5.

Grate the remaining cooked yokes over the eggs with a cheese grater to obtain fluffy yellow yolks.
