Chokecherry (prunus virginiana)
Three species of wild cherry grow in Canada. The chokecherry is the most plentiful and the easiest to harvest. The chokecherry has a large pit which makes it difficult to use in jams, which is why it tends to be used for jellies. As the juice contains very little natural pectin, commercial pectin must be added.
Chokecherry jelly is excellent on toast. In Western Canada the preference is for a jelly that is not too sweet, and it is used to accompany wild game, particularly Canada goose.
